Philip Cooper, Michelin Star Chef Offers Recipes And His Brand New Event #Riverfood

Interest in locally sourced ingredients, regional recipes and foraging, have had chefs exploring and serving food from the land now get ready for #riverfood – a rich and diverse supply from over 125 different types of edible fish can be found in the fresh river waters of the United Kingdom.

Riverfood is the idea of Phil Cooper, Arno Marsman and Andrea Britton of Coopers Restaurant Consultants. During a career spanning 30 years, Phil Cooper has established himself as one of the most successful chefs in the UK, working with respected names such as The Waterside Inn, Claridges, The Mirabelle and Le Manoir aux Quat’ Saisons to name a few.

Taking place aboard one of the oldest boats on the Thames, the MV Royalty at The Festival Pier, the launch will bring together a variety of dishes from produce sourced predominately from Rivers across the UK, including the Thames Estuary.

Delights such as Hollow Shore Oysters with Green Tabasco Jelly,
Estuary Smoked Kipper with Clarence Court Egg and Cress, Pike and Green Peppercorn Sausage with Puy Lentils. Chargrilled Jack Pike with Oyster Sour Cream, Roast Duck with Pickled Gooseberry. Riverfood is served with champagne or a pint Meantime Ale.
