Salted British Caviar at Bird of Smithfield

Bird of Smithfield logoBird of Smithfield is the first to serve caviar harvested in the UK. The restaurant, launching next month, is the first solo venture from acclaimed chef Alan Bird who will serve ‘Salted British Caviar’ exclusively from his Smithfield restaurant.

Salted British Caviar

Sourced from a farm located in North Devon, the production marks the first of its kind in the UK. The site, acquired in partnership by Shah Caviar employs a ‘flow-through’ fresh water system fed by a spring located in Exmoor National Park. This method – compared to temperature controlled, ‘circulation farms’ often employed by foreign producers – results in a much fresher, better tasting product.

The harvested caviar is seasoned using local Cornish Sea Salt before being packaged on site and transported to Bird of Smithfield.

Each batch is made to order with a production lead time of 2-3 weeks.
