From avant-garde culinary creations to tempting “cevicherías” for marinated raw fish in freshly squeezed key lime and delectable “chifas,”  Asian fusion soups, stir fries, fried rice, noodles and tangy sauces. Central, hailed as a world’s premier restaurant, unveils Perú’s biodiversity through a 17-course menu curated by Chef Virgilio Martínez.
