Baked Alaska – Heston Blumenthal Reworks an Old School Classic for Waitrose

Baked Alaska is back. The old school classic will be back as a main feature on dinner tables across the country this Christmas, as Waitrose introduces its newest addition to the Heston From Waitrose range – The Heston From Waitrose Caramelised Banana and Raspberry Baked Alaska.

Following on from the success of the Heston From Waitrose Hidden Orange Christmas Pudding, Waitrose is introducing a new centrepiece Christmas dessert.

The new spin on the classic Baked Alaska does not have an ice cream centre, instead Heston has replaced the cold centre with a smooth parfait one.  The core of the dessert, hidden under the meringue topping is a smooth raspberry parfait encased in dark chocolate surrounded by a caramelised banana parfait which is then wrapped in a light sponge.

Heston says, “Baked Alaska is a childhood favourite of mine. I love the juxtaposition of the soft meringue against the smooth creamy interior, but I hated the idea that it all melted so quickly.  So I was inspired to create my take on the old school classic by creating a raspberry mousse centre which gave the creaminess without melting and adding one of my favourite flavours – bananas!”

Andrea Watson, who helped develop  the essential Waitrose range back in 2009, comments, “In recent years Heston has really captured our shopper’s imagination at Christmas.  I’m sure that  just like our Hidden Orange Christmas puddings his version of the Baked Alaska will be extremely popular with Waitrose shoppers this Christmas.” We reckon she’s right. Tuesdays are Heston days at Waitrose when he pops in to talk about the products with the development team. Heston loves the intensity of flavour and delivers something familiar but different.

The Heston From Waitrose Caramelised Banana and Raspberry Baked Alaska will be available in all branches in the freezer aisle from October 2012.
